
Mini Banitsas with Mozzarella and Tomatoes
Little triangular filo parcels filled with tomato, spring onion, basil and mozzarella, sprinkled with sesame seeds. Serve warm.

Ingredients

| 100 г | cow's butter |
| 280 г | mozzarella |
| 25 г | sesame seeds |

Instructions
Note: Tedo doesn't like it because it's greasy.
- Heat the oven to 180 degrees. Mix the chopped tomatoes, spring onion and basil in a bowl, season with salt and add black pepper to taste.
- Spread one filo sheet on a cutting board. Brush with the softened butter and place another sheet on top. Cut the rectangle across its width into 5 equal strips.
- Put 1 tbsp of the tomato mixture and 1 tbsp mozzarella about 2.5 cm from the lower right end of the strips, slightly to the right. Fold the lower left corner over the filling to form a triangle and fold the sheets successively until you get a tight little banitsa.
- Make 25 mini banitsas, brush them on top with a little butter and sprinkle with the sesame seeds. Grease two baking trays with butter, arrange and bake in batches for 10-15 minutes or until golden. If you like, you can skip the sesame seeds.
- If desired, serve the mini banitsas garnished with basil and curly endive.
To be eaten warm.
