Mochi Waffles

Waffles made with glutinous rice flour — crispy on the outside, chewy within, with a satisfying pull that standard waffles cannot achieve.

Ingredients

130 gglutinous rice flour
30 gall-purpose flour
2 tbsp30 mlsugar
1 tsp5 mlbaking powder
1 pinchsalt
1large egg
180 mlwhole milk
2 tbsp30 mlunsalted butter, melted
1/2 tsp2.5 mlvanilla

Instructions

  1. Whisk both flours, sugar, baking powder, and salt together.
  2. In a separate bowl, whisk the egg, milk, melted butter, and vanilla.
  3. Combine the wet and dry ingredients, stirring until smooth. The batter will be thicker than standard waffle batter.
  4. Preheat and grease a waffle iron.
  5. Pour the batter onto the center of the waffle iron and cook for 3 to 4 minutes until golden, crispy, and easily released.
  6. Serve immediately with red bean paste, fruit, or whipped cream.
