Monster Cell Truffles

Purple-and-blue white chocolate truffles inspired by One-Punch Man, coated in crushed crispy rice cereal to resemble a monster cell. "The thought of getting stronger tempts you? A monster cell. All you need to do is ingest this into your body." —Gale Wind, One-Punch Man

Ingredients

1 cup (170 g)Truffles: finely chopped white chocolate
¼ cup (60 ml)heavy whipping cream
3 tablespoons45 mlunsalted butter, at room temperature
Pinchsalt
Navy blue gel food coloring
Confectioners' sugar, for dusting
1 cup (165 g)Crispy rice: white candy melts
Purple and red gel food coloring
½ cup (13 g)crispy rice cereal, with the rice crisps crushed in half

Instructions

  1. To make the truffles: Place the chopped white chocolate in a medium microwave-safe bowl. In a small microwave-safe bowl, microwave the heavy cream until it is hot, 40 to 60 seconds (or heat in small saucepan over low heat until hot). Pour the hot heavy cream into the bowl with the white chocolate. Let the chocolate melt into the cream for 1 minute, then whisk until smooth and fully combined.
  2. Add the butter and salt and stir to combine. Add 2 drops of the navy blue food coloring and use the whisk to incorporate. (If you want to give the monster cells stripes, make swirls in the batter instead of fully combining the food coloring.) Cover the mixture with plastic wrap, ensuring that it touches its surface. Freeze until solid, about 10 minutes.
  3. Line a baking tray with parchment paper and lightly dust it with confectioners' sugar. Using a small scoop or a spoon, scoop white chocolate truffles onto the tray. Once all the truffles are portioned, lightly dust your hands with confectioners' sugar and form each into a ball. Place the truffles back in the refrigerator until needed.
  4. To make the crispy rice: If using white candy melts, melt according to the package instructions. Add 2 drops of purple gel food coloring and 1 drop of red to the melted chocolate. Mix with a spatula or whisk until the desired color is reached.
  5. Add the crushed crispy rice cereal to the melted chocolate and mix until fully coated. Roll a white chocolate truffle in the mixture to coat the exterior. Remove the truffle with a spoon and place onto a piece of clean parchment paper. Repeat for all the truffles. Let cool until hardened, 3 to 5 minutes.
