Mooncake
A Chinese mooncake pastry symbolizing longevity and harmony, filled with your choice of salted egg yolks, mung bean paste, chocolate or jam.
Ingredients
| 30 мл | oil |
| 160 г | maple syrup |
| 240 г | flour |
| 1 бр. | egg yolks |
| 10 г | peanut butter |
Instructions
- Sift the flour into a deep bowl. Make a well in the center with a spoon and pour in the maple syrup. Add the egg yolk, peanut butter and oil. Stir until the ingredients come together. Knead by hand until you get a soft dough.
- If the dough becomes dry and crumbly, add a little more oil or syrup. If it is wet, add more flour.
- Do not over-knead. This develops the gluten and makes the dough harder to shape. Wrap it in cling film and let it rest for 30-40 minutes.
- Form small circles from the dough by hand, which are filled with your choice — dried salted egg yolks, mung bean paste, etc.
- The easiest option is to fill them with chocolate or jam. The dough is shaped around the filling. The cakes are arranged on a paper-lined baking tray.
- Bake at 190°C for 8 minutes, until golden. If you shape larger mooncakes, you can bake at 200°C. Spray the finished cakes with a little water so they get a crispy crust.
