
Multilayer Soda Bread with Cheese
A layered soda bread built from thin stretched sheets of dough greased with fat and filled with crumbled cheese, then gathered and baked.

Ingredients
| 250 мл | yogurt |
| 1 ч.л. | baking soda |
| 1 ч.л. | vinegar |
| 1 бр. | egg + water |
| 1 ч.л. | salt |
| 500 г | flour |
| 200 г | cheese |
| — | pork lard, oil, butter |
Instructions
- Pour the yogurt into a bowl, put the soda on top of it, and the vinegar on top of that. Put the egg in the cup used to measure the milk (250 ml) and top it up with water. Pour it into the mixture, add the salt and stir everything together.
- Gradually add the sifted flour and knead a soft dough. Divide it into eight equal parts, which are shaped into balls. If you want to be sure the dough will not stick to the counter during the following steps, grease one of the balls only with oil and mark it. Grease the rest with a mixed fat of equal parts melted pork lard and oil, cover them with cling film and leave them to rest for 20 minutes.
- With greased hands take the ball that was greased only with oil, stretch it as much as possible and place it on an oil-greased counter. Press it again with your hands to thin it and reach a size of about 25 cm. Grease it on top with a little of the mixed fat. Do not put cheese. Take a second ball of dough, stretch it and place it over the first. Pull its edges to reach the desired size. Grease it again with fat and sprinkle with 1/3 of the crumbled cheese.
- Proceed the same way with the remaining dough, alternating two sheets and cheese, greasing each sheet with fat. Do not put cheese on the last sheet.
- A little mound of sheets is formed, the edges of which are folded up and gathered in the middle so as to form a ball. Turn it over so the smooth part is on top, place it in a tray (26-28 cm in diameter) lined with baking paper on the bottom and press it with your palms to fill the tray.
- Bake in an oven heated to 190-200 degrees until done, about 30-35 minutes. After removing it from the oven, brush it with cow's butter. Enjoy!
