
Nadupena Banitsa (Fluffy Crumpled Cheese Banitsa)
Ready-made filo sheets folded like an accordion, sprinkled with cheese, and doused with an egg-and-soda-water mixture so the banitsa stays puffed up and doesn't collapse.
Ingredients
| 1 пакет | ready-made filo sheets (in this case "VITA STAR") |
| 400-450 гр | cheese |
| 4-5 бр. | eggs (depending on their size) |
| 250 мл | sparkling water |
| — | salt (to your judgment; author doesn't add any) |
| 1/2 пакет | cow's butter |
| 5 с.л. | oil (plus a little more to grease the tray) |
| 300 гр | white brine cheese |
Instructions
- Grease a 28 cm diameter tray with oil.
- Take three sheets at a time, fold them like an accordion, and sprinkle with cheese.
- On top of that place another three sheets folded like an accordion, and again sprinkle with cheese. Continue the procedure until the sheets run out.
- Cut the still-raw banitsa into pieces, carefully pour over it the heated oil and butter, and then the mixture of beaten eggs and soda water. When pouring over the banitsa, make sure it is soaked evenly and especially into the cuts.
- Put it in an oven preheated to 180 degrees and bake until done — doneness is understood when the banitsa itself turns nicely golden.
- Take it out of the oven, arrange 4 vessels in a square (in this case I used clay pots) and immediately turn the tray with the banitsa carefully over them, but make sure that only the edges of the tray "step" onto the vessels, otherwise the creation will get crushed and dented :).
- Carefully wrap the banitsa in towels and leave it like this until it cools completely.
The aim of this method of preparation is that the banitsa itself does not fall and get crushed, but stays as puffed up as it was during baking :).
