Nigerian spicy beef skewers

Nigerian-style spicy beef skewers (suya) coated in a spiced peanut rub. This dish is featured in the book's African section; it is Nigerian. Prep time does not include marinating time. Tip: The skewers can be served with tomato sauce and/or sliced onion.

Ingredients

150 gpeanuts
4garlic cloves
30 gginger root
4 thot red pepper (chilli)
2 - 4 tsweet red paprika
4 tblack pepper
1000 gbeef steaks
4 Tsunflower oil
fat, for the tray
salt
32 - 40wooden skewers

Instructions

Preparation time: 45 minutes (excluding marinating time).

  1. Soak the wooden skewers in lukewarm water to soften.
  2. Grind or finely chop the peanuts. Peel the garlic and ginger and press them. Mix them with the peanuts and the three types of pepper.
  3. Wash and dry the steaks, then remove the sinews. Cut them into thin strips and salt them.
  4. Thread the meat onto the dried wooden skewers. Place them in a shallow bowl and brush with oil, then roll them well in the peanut-and-spice mixture, pressing the meat lightly so it adheres better. Leave the skewers in the refrigerator for at least half an hour to absorb the spices.
  5. Arrange the beef skewers in a greased baking tray and roast for 20 minutes in an oven preheated to 200°C, turning halfway through.
