
No-Bake 5-Ingredient Cheesecake
A Japanese-style no-bake cheesecake set with melted marshmallows and cream cheese, layered with jam and chilled; an optional wafer crust is included. Tagged as a breakfast/Christmas treat.

Ingredients
| 200 g | unsalted cream cheese | |
| 200 ml | milk (or soy milk) | |
| 200 g | vanilla-flavored marshmallows | |
| 1 Tbsp | 15 ml | lemon juice |
| — | jam of your choice | |
| 100 g | vanilla wafers or biscuits (for optional crust) | |
| 30 g | butter, softened (for optional crust) |
Instructions
- Line the pan with plastic wrap.
- Put the marshmallows and milk (or soy milk) in a pot over low heat and stir constantly until the marshmallows melt (about 7 minutes). It will bubble up, but the bubbles fade a minute after removing from the heat.
- Cream the cream cheese in a large bowl. Add the marshmallow mixture a third at a time, mixing well after each addition.
- Set the bowl over a bowl of ice water, add the lemon juice and mix until thick (about 20 minutes).
- Pour half the mixture into the pan, add the jam of your choice, cover with the rest of the mixture and smooth the surface.
- Cover with plastic wrap and chill in the fridge about 2 hours until set. Remove from the pan and cut into pieces. Tip: cut with a knife warmed in hot water, dipping and wiping the knife before each cut. Optional crust: Smash the vanilla wafers or biscuits in a Ziploc bag, add the softened butter, mix well and press firmly into the pan.
