Blueberry Thyme Gelato

A blueberry custard gelato infused with fresh thyme and finished with a blueberry preserve mix-in.

Ingredients

3/4 cup180 mlfresh or frozen blueberries
2/3 cup160 mlwhole milk
1/3 cup80 mlheavy cream
1/3 cup80 mlgranulated sugar
2 largeegg yolks
3/4 teaspoon3.8 mlfresh thyme leaves, finely chopped
1/2 teaspoon2.5 mlvanilla extract
pinchfine sea salt
1 tablespoon15 mlblueberry preserves, for mix-in

Instructions

  1. In a small saucepan, combine blueberries, half of the sugar, and thyme. Cook over medium heat, stirring occasionally, until blueberries burst and mixture is syrupy, about 4–5 minutes. Remove from heat and let cool slightly.
  2. In a blender, combine the blueberry mixture with milk and blend until smooth.
  3. In a separate bowl, whisk together egg yolks, remaining sugar, vanilla extract, and salt until smooth.
  4. Pour the blended blueberry-milk mixture and heavy cream into a clean saucepan and heat over medium until steaming but not boiling, about 2–3 minutes.
  5. Slowly pour about ⅓ of the hot blueberry-cream mixture into the egg yolk mixture, whisking constantly to temper.
  6. Pour the egg mixture back into the saucepan and return to medium-low heat. Cook, stirring constantly with a rubber spatula, until the mixture thickens and reaches 170°F–175°F on an instant-read thermometer, about 3–5 minutes.
  7. Remove from heat. Make sure pint base is closed. Pour mixture through a fine-mesh strainer into an empty CREAMi® Swirl Pint to remove any solids.
  8. Place pint in an ice bath to cool for 15–20 minutes, stirring occasionally. Once cooled, place storage lid on pint and freeze for 24 hours.
  9. Remove pint from freezer and remove lid from pint. Place Swirl Pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Slide bowl assembly onto motor base and twist the handle right to raise the platform and lock in place.
  10. Select SCOOP, then select GELATO.
  11. With a spoon, create a 1½-inch wide hole that reaches the bottom of the pint. Add blueberry preserves to the hole in the pint and process again using the MIX-IN program.
  12. When processing is complete, remove gelato from the pint and serve immediately.
