Dark Chocolate Orange Gelato

A rich custard gelato loaded with dark cocoa, melted chocolate, and bright orange zest.

Ingredients

1/2 cup120 mlwhole milk
1/2 cup120 mlheavy cream
1/4 cup60 mlgranulated sugar
1large egg yolk
3 tablespoons45 mldark cocoa powder
1 1/2 ounces43 gdark chocolate (70% or higher), finely chopped
2 teaspoons10 mlorange zest
1/4 teaspoon1.3 mlpure orange extract
pinchfine sea salt

Instructions

  1. In a small saucepan, whisk together milk, heavy cream, and sugar. Place over medium heat and cook, stirring occasionally, until the mixture is steaming but not boiling, about 3–4 minutes.
  2. In a separate bowl, whisk egg yolks until smooth. Slowly pour about 1/3 of the hot milk mixture into the yolks, whisking constantly to temper.
  3. Pour the egg mixture back into the saucepan and return to medium-low heat. Cook, stirring constantly with a rubber spatula, until the mixture thickens and reaches 170°F–175°F on an instant-read thermometer, about 3–5 minutes.
  4. Remove from heat and immediately whisk in cocoa powder, chopped dark chocolate, orange zest, orange extract, and salt until chocolate is fully melted and mixture is smooth.
  5. Make sure pint base is closed. Pour mixture through a fine-mesh strainer into an empty CREAMiĀ® Swirl Pint to remove any lumps and zest pieces.
  6. Place pint in an ice bath to cool for 15–20 minutes, stirring occasionally. Once cooled, place storage lid on pint and freeze for 24 hours.
  7. Remove pint from freezer and remove lid from pint. Place Swirl Pint in outer bowl, install Creamerizerā„¢ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Slide bowl assembly onto motor base and twist the handle right to raise the platform and lock in place.
  8. Select SCOOP, then select GELATO.
  9. When processing is complete, remove gelato from the pint and serve immediately.
