Ingredients
| 4 | egg yolks | |
| 25 g | date syrup | |
| 190 ml | semi-skimmed milk | |
| 90 ml | single cream | |
| 80 g | mascarpone | |
| 100 g | fresh figs (chopped, or soft dried figs soaked and blended) | |
| 30 g | skimmed milk powder | |
| 50 g | cottage cheese (blended smooth) | |
| 1/2 tsp | 2.5 ml | cinnamon (optional) |
Instructions
- Whisk egg yolks with date syrup until smooth, then gradually combine with milk and cream.
- Heat gently over medium-low, stirring constantly, until slightly thickened and reaching 82–83ºC.
- Remove from heat, stir in figs and cinnamon, allowing the mixture to soften and release flavour.
- Add mascarpone, cottage cheese and milk powder, then blend until smooth and lightly thickened.
- Let cool fully, strain if needed, then pour into a Ninja Swirl tub. Secure the lid and freeze flat for at least 24 hours.
- Insert the frozen tub, assemble, then select SOFT SERVE, followed by SOFT SERVE GELATO.
- Dispense immediately for a soft, creamy texture. Finish with a few fig pieces or a light drizzle of honey for a natural sweetness boost.
