Ingredients
| 4 | egg yolks | |
| 20 g | honey or caster sugar | |
| 220 ml | semi-skimmed milk | |
| 100 ml | single cream | |
| 80 g | low-fat ricotta (smooth) | |
| 40 g | skimmed milk powder | |
| 15 g | unflavoured whey protein | |
| 1 tsp | 5 ml | vanilla bean paste |
| 1 pinch | pinch of fine sea salt |
Instructions
- Whisk egg yolks with honey until pale, then gradually whisk in milk and cream until smooth.
- Cook gently over medium-low heat, stirring constantly, until the custard lightly coats the back of a spoon and reaches 82–83ºC.
- Remove from heat, add ricotta, skimmed milk powder, vanilla and salt, then blend or whisk until smooth and lightly aerated.
- Let cool slightly, whisk in whey protein, strain for a silky texture, cool fully, then pour into a Ninja Swirl tub. Secure the lid and freeze flat for at least 24 hours.
- Insert the frozen tub, assemble as instructed and select SOFT SERVE, then SOFT SERVE GELATO.
- Dispense immediately for a smooth swirl. For a classic finish, serve plain or add a light drizzle of warm milk with a few white chocolate shavings.
