Lime Mint Gelato

A refreshing custard gelato infused with mint and brightened with fresh lime juice and zest.

Ingredients

1/2 cup120 mlwhole milk
1/3 cup80 mlheavy cream
1/4 cup60 mlgranulated sugar
2 largeegg yolks
1 1/2 teaspoon7.5 mlfinely grated lime zest
3 tablespoon45 mlfresh lime juice
3 tablespoon45 mlfresh mint leaves, packed
1/2 teaspoon2.5 mlvanilla extract
pinchfine sea salt
1 tablespoon15 mlchopped candied lime peel or extra mint, for mix-in

Instructions

  1. In a small saucepan, combine milk, heavy cream, and half of the sugar. Heat over medium, stirring occasionally, until steaming but not boiling, about 2–3 minutes.
  2. In a separate bowl, whisk together egg yolks, remaining sugar, lime zest, vanilla extract, and salt until smooth.
  3. Slowly pour about ā…“ of the hot milk mixture into the egg yolk mixture, whisking constantly to temper.
  4. Pour the egg mixture back into the saucepan and return to medium-low heat. Cook, stirring constantly with a rubber spatula, until the mixture thickens and reaches 170°F–175°F on an instant-read thermometer, about 3–4 minutes.
  5. Remove from heat and add mint leaves. Cover and let steep for 10 minutes, then strain out the mint leaves using a fine-mesh strainer.
  6. Stir in the lime juice until fully combined.
  7. Make sure pint base is closed. Pour mixture through a fine-mesh strainer into an empty CREAMiĀ® Swirl Pint to remove any solids.
  8. Place pint in an ice bath to cool for 15–20 minutes, stirring occasionally. Once cooled, place storage lid on pint and freeze for 24 hours.
  9. Remove pint from freezer and remove lid from pint. Place Swirl Pint in outer bowl, install Creamerizerā„¢ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Slide bowl assembly onto motor base and twist the handle right to raise the platform and lock in place.
  10. Select SCOOP, then select GELATO.
  11. With a spoon, create a 1½-inch wide hole that reaches the bottom of the pint. Add chopped candied lime peel or extra mint to the hole in the pint and process again using the MIX-IN program.
  12. When processing is complete, remove gelato from the pint and serve immediately.
