1/3 cup80 mlpowdered erythritol (or any preferred sugar substitute)
1/2 teaspoon2.5 mlpeppermint extract
2-3 dropsgreen food coloring (optional)

Instructions

  1. Prepare the Base: In a blender, combine the heavy cream, whole milk, powdered erythritol, peppermint extract, and green food coloring. Blend until smooth and well combined.
  2. Freeze: Pour the mixture into a Ninja Creami pint jar, ensuring it does not exceed the max fill line. Secure the lid and freeze for at least 24 hours.
  3. Churn the Ice Cream: After freezing, remove the lid and insert the pint into the Ninja Creami. Lock the lid and select the "Ice Cream" function. Let the machine work its magic.
  4. Add Mix-Ins: Once the ice cream is churned, create a well in the center of the ice cream using a spoon. Add the mini chocolate chips into the well and return the pint to the machine. Use the "Mix-In" function to incorporate the chocolate chips.
  5. Serve: Scoop the mint chocolate chip ice cream into bowls and enjoy immediately or store it in the freezer for later.
