Spinach Mint Ice Cream
A vibrant green ice cream blending mint and hidden spinach, swirled with chocolate chunks and brownie pieces.

Ingredients
| 1/2 cup | 120 ml | frozen spinach, thawed and squeezed dry |
| 1 cup | 240 ml | whole milk |
| 1/2 cup | 120 ml | granulated sugar |
| 1 teaspoon | 5 ml | mint extract |
| 3-5 drops | green food coloring (optional) | |
| 1/3 cup | 80 ml | heavy cream |
| 1/4 cup | 60 ml | chocolate chunks, chopped |
| 1/4 cup | 60 ml | brownie, cut into 1/2-inch pieces |
Instructions
- In a high-speed blender, add the spinach, milk, sugar, mint extract, and food coloring. Pulse until the mixture is completely smooth.
- Transfer the mixture into a clean Ninja pint container. Add the heavy cream and stir until well combined. Secure the storage lid and freeze for 24 hours.
- Remove from freezer, take off the storage lid, and place the pint in the outer bowl of your Ninja machine. Select the "SCOOP" function and process until the cycle is complete.
- After processing, use a spoon to create a 1 1/2-inch wide hole in the center that reaches the bottom of the pint. Add the chocolate chunks and brownie pieces into the hole and press the "MIX-IN" button.
- When processing is complete, scoop the ice cream into bowls and serve immediately.
