Strawberry Balsamic Gelato

A custard gelato swirled with strawberry-balsamic puree for a sweet-tangy finish.

Ingredients

3/4 cup180 mlfresh strawberries, hulled and quartered
1/2 cup120 mlwhole milk
1/2 cup120 mlheavy cream
1/3 cup80 mlgranulated sugar
2 largeegg yolks
2 teaspoon10 mlbalsamic vinegar
2 teaspoon10 mllemon juice
1/4 teaspoon1.3 mlvanilla extract
pinchfine sea salt

Instructions

  1. In a small saucepan, combine strawberries and 2 tablespoons of the sugar. Cook over medium heat, stirring occasionally, until strawberries are soft and syrupy, about 5–7 minutes. Remove from heat and let cool for 5 minutes.
  2. In a blender, puree the cooked strawberries with balsamic vinegar and lemon juice until smooth. Set aside.
  3. In a separate saucepan, combine milk, heavy cream, and half of the remaining sugar. Place over medium heat and cook, stirring occasionally, until steaming but not boiling, about 3–4 minutes.
  4. In a bowl, whisk together egg yolks, remaining sugar, vanilla extract, and salt until smooth.
  5. Slowly pour about ⅓ of the hot milk mixture into the egg yolk mixture, whisking constantly to temper.
  6. Pour the egg mixture back into the saucepan and return to medium-low heat. Cook, stirring constantly with a rubber spatula, until the mixture thickens and reaches 170°F–175°F on an instant-read thermometer, about 3–5 minutes.
  7. Remove from heat and stir in the strawberry-balsamic puree until fully combined.
  8. Make sure pint base is closed. Pour mixture through a fine-mesh strainer into an empty CREAMi® Swirl Pint to remove any seeds or lumps.
  9. Place pint in an ice bath to cool for 15–20 minutes, stirring occasionally. Once cooled, place storage lid on pint and freeze for 24 hours.
  10. Remove pint from freezer and remove lid from pint. Place Swirl Pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Slide bowl assembly onto motor base and twist the handle right to raise the platform and lock in place.
  11. Select SCOOP, then select GELATO.
  12. When processing is complete, remove gelato from the pint and serve immediately.
