Ingredients
| 350 ml | Blanco tequila |
| 480 ml | fresh watermelon juice, strained |
| 120 ml | fresh lime juice |
| 180 ml | jalapeño simple syrup |
| 120 ml | cold filtered water |
| — | fresh jalapeño slices, for garnish |
| — | chili-lime seasoning (Tajín), for the rim |
Instructions
- Combine: Whisk the tequila, watermelon juice, lime juice, jalapeño syrup and water in a pitcher.
- Pre-chill: Refrigerate until it reaches 4°C (40°F).
- Pour: With the reservoir locked, pour the chilled mixture in, staying below the Max Fill line.
- Set: Turn the machine on and select the Spiked Slush setting.
- Freeze: Run for 20–25 minutes until the auger creates firm peaks.
- Serve: Rim chilled glasses with Tajín, dispense and garnish with a thin jalapeño slice.
Pro-tip: To make jalapeño syrup, simmer 1 cup sugar, 1 cup water and 1 sliced jalapeño for 5 minutes; strain and cool completely before mixing. Approx. 10% ABV.
