Okonomiyaki

Ingredients

1 cup240 mlwheat flour
1/2 cup120 mlwater
1/4 tsp1.3 mlsalt
1/4 tsp1.3 mlbaking soda
2eggs
1 cup240 mlfinely chopped fresh cabbage
2 stalksgreen onion, finely chopped
1/3 tbsp5 mlgrated ginger
1/2 cup120 mlketchup
1/2 tbsp7.5 mlbrown sugar
3 tbsp45 mlsoy sauce
1/2 tbsp7.5 mlmirin (sweetened sake) or dessert wine
1 tsp5 mlWorcestershire sauce
1/2 tsp2.5 mlgrated ginger (for sauce)
1/3 clovegarlic, pressed
3-4shiitake mushrooms
50 gbean sprouts
100 gbacon

Instructions

  1. In a large bowl combine the flour, water, salt and baking soda.
  2. Divide the mixture into two parts and crack one egg into each.
  3. Mix each portion well by hand until a batter forms.
  4. Divide the cabbage and green onion evenly and add to the two batters.
  5. Soak the shiitake mushrooms in water for 30 minutes.
  6. Drain and cut them into strips.
  7. Mix them with the bean sprouts and the bacon cut into small pieces.
  8. Divide the filling in two.
  9. Pour each portion of batter into a lightly greased round pan, cook lightly and flip.
  10. Braise the filling in a little fat and pour it over the batter.
  11. Bake the pancake in the oven until done.
  12. Prepare the second portion the same way.
  13. Serve the okonomiyaki with sauce made by combining the sauce ingredients (ketchup, brown sugar, soy sauce, mirin or dessert wine, Worcestershire sauce, grated ginger and pressed garlic).
