One-Pot Orange Chicken and Cauliflower Rice

A Whole30-friendly pressure cooker dish of tender orange-glazed chicken served over mashed cauliflower "rice".

Ingredients

1 1/3 wholelarge heads cauliflower, trimmed and quartered
2 pounds905 gchicken breasts
11dates, pitted and chopped
1 1/2 wholelarge oranges, zested
5 1/2 wholelarge oranges, juiced
2 1/2 tablespoons38 mlcoconut aminos
4 teaspoons20 mlsesame oil
4 teaspoons20 mlminced fresh ginger
2 2/3 teaspoons13 mlrice vinegar
3 wholecloves garlic
4 teaspoons20 mlarrowroot starch
to tastesalt and ground black pepper
greens (optional)
chopped chile pepper (optional)
scallions (optional)
avocado (optional)

Instructions

  1. Add 1 cup water to the inner steel pot of a pressure cooker. Place steamer basket over water and add cauliflower.
  2. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 1 minute on High pressure.
  3. Set steam vent handle to Venting to quick-release pressure. Press Cancel. Remove steamer basket, and place cauliflower in a large bowl. Mash cauliflower with potato masher until it resembles the consistency of rice and set aside.
  4. Remove water from pressure cooker and add chicken, dates, orange zest, orange juice, coconut aminos, sesame oil, ginger, rice vinegar, and garlic.
  5. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 10 minutes on High pressure.
  6. Set steam vent handle to Venting to quick-release pressure. Press Cancel. Remove chicken and place on a plate.
  7. Turn the pressure cooker to Saute mode on High; stir in arrowroot starch. Whisk until sauce is thickened, about 3 minutes. Press Cancel.
  8. Using a high speed blender or immersion blender, blend the sauce until smooth. Add salt and black pepper to taste.
  9. Cut chicken into 1/2-inch cubes and add to sauce. Serve chicken with cauliflower rice, greens, chopped pepper, scallions, and avocado.

Mealthy Tip: Substitute chicken thighs for chicken breast for a richer flavor. Substitute rice or quinoa for the cauliflower if you are not following the Whole30 diet.
