One-Pot Orange Chicken and Cauliflower Rice
A Whole30-friendly pressure cooker dish of tender orange-glazed chicken served over mashed cauliflower "rice".

Ingredients

| 2 1/2 tablespoons | 38 ml | coconut aminos |
| 4 teaspoons | 20 ml | sesame oil |
| 4 teaspoons | 20 ml | minced fresh ginger |
| 2 2/3 teaspoons | 13 ml | rice vinegar |

Instructions
- Add 1 cup water to the inner steel pot of a pressure cooker. Place steamer basket over water and add cauliflower.
- Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 1 minute on High pressure.
- Set steam vent handle to Venting to quick-release pressure. Press Cancel. Remove steamer basket, and place cauliflower in a large bowl. Mash cauliflower with potato masher until it resembles the consistency of rice and set aside.
- Remove water from pressure cooker and add chicken, dates, orange zest, orange juice, coconut aminos, sesame oil, ginger, rice vinegar, and garlic.
- Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 10 minutes on High pressure.
- Set steam vent handle to Venting to quick-release pressure. Press Cancel. Remove chicken and place on a plate.
- Turn the pressure cooker to Saute mode on High; stir in arrowroot starch. Whisk until sauce is thickened, about 3 minutes. Press Cancel.
- Using a high speed blender or immersion blender, blend the sauce until smooth. Add salt and black pepper to taste.
- Cut chicken into 1/2-inch cubes and add to sauce. Serve chicken with cauliflower rice, greens, chopped pepper, scallions, and avocado.
Mealthy Tip: Substitute chicken thighs for chicken breast for a richer flavor. Substitute rice or quinoa for the cauliflower if you are not following the Whole30 diet.
