Onigiri – Bonito Flakes
Soft, smoky bonito flakes mixed with soy sauce create a savory umami-packed filling that disappears into every bite.
Ingredients
| 400 g | cooked Japanese short-grain rice, warm | |
| 14 g | dried bonito flakes (katsuobushi) | |
| 1 1/2 tsp | 7.5 ml | soy sauce |
| 1 tsp | 5 ml | sesame oil |
| 2 sheets | nori, cut into strips | |
| — | salt for shaping |
Instructions
- Combine bonito flakes, soy sauce, and sesame oil in a small bowl and mix well.
- Wet your hands with cold water and rub a small pinch of salt onto your palms.
- Take about 1/2 cup (100g) of warm rice and flatten it in your palm. Add a spoonful of the bonito mixture to the center.
- Press the rice firmly around the filling into a triangle shape.
- Wrap the base with a nori strip.
- Repeat with remaining rice and filling.
