Onion Rings

Ingredients

1 1/2 cups360 mlall-purpose flour, divided
3/4 teaspoon3.8 mlfine sea salt
3/4 cup180 mlbuttermilk
2eggs
1 1/2 cups360 mlplain bread crumbs
1 1/2large sweet yellow onions, cut into 1/2-inch thick rings and separated
cooking spray

Instructions

  1. Combine 1 cup flour and salt in a shallow dish. Beat remaining flour, buttermilk, and egg together in a separate shallow dish until smooth and thickened. Add bread crumbs to a third shallow dish.
  2. Lightly dredge onion rings in flour. Dip onion rings into buttermilk mixture and drain excess liquid. Dredge onion rings in bread crumbs until evenly coated.
  3. Spray CrispLid fryer basket and onion rings with cooking spray and arrange onion rings in a single layer in fryer basket, working in batches as needed.
  4. Place CrispLid trivet in the inner steel pot of pressure cooker and put fryer basket on the trivet.
  5. Set CrispLid on top of inner steel pot and plug in. Set to 400°F (200°C) and cook onion rings for 5 minutes. Flip onion rings and continue cooking until browned and crispy, 5 to 7 minutes more. Lift the lid using the handle and set it on the silicone mat. Repeat with remaining onion rings.

Mealthy Tip: Add a couple pinches cayenne pepper to the flour-salt mixture for a little heat. Make your own buttermilk if you don't have any on hand. Mix 1 cup milk and 1 tablespoon lemon juice or white vinegar together in a bowl or measuring cup and let sit for about 10 minutes.
