
Orange Cupcakes with Chocolate Chips
Light orange-flavored cupcakes studded with pieces of chocolate, baked in silicone molds.

Ingredients

| 1 tea cup | sugar | |
| 1/2 tea cup | oil | |
| 1 tea cup | yogurt | |
| — | juice of half an orange | |
| — | zest of one orange | |
| 2 tsp | 10 ml | baking powder |
| 2 tea cups | flour | |
| 90 g | chocolate (or chocolate chips) |
Instructions
(makes 12)
- In a suitable bowl, beat the yogurt, oil, orange juice and egg with a fork. Then add the sugar and mix again.
- Sift the flour with the baking powder and add it in parts to the other mixture. Mix again. Finally add the orange zest and the finely chopped chocolate and stir until distributed through the mixture.
- For these cupcakes I used silicone molds, which don't need greasing. They come out easily after baking. If you don't have silicone molds, put paper cups in a muffin tin.
- Fill each mold with mixture, but not to the top, only 2/3 of their volume.
- Bake in an oven preheated to 170-180°C for about 25-30 minutes. You can tell if they are ready when you insert a toothpick into the cupcakes and it comes out dry. Remove from the oven and cool.
- Once well cooled, carefully remove them from the silicone molds.
