Orange Peel Liqueur

A homemade Balkan-style liqueur made by steeping orange peel in rakia (fruit brandy) and sweetening with syrup. Placed in the book's Latin/Spanish section, but the use of rakia makes it a Bulgarian home recipe.

Ingredients

3 pcsOranges, larger
250-300 mlStrong rakia (fruit brandy)
250 mlWater (for diluting the rakia)
500 gSugar
500 mlWater (for the syrup)

Instructions

  1. Cut the orange peels into cubes and cover them with 250-300 ml of strong rakia diluted with half its volume of water.
  2. Cover the vessel tightly and let it steep in a warm place for 1 full day (24 hours).
  3. Strain the aromatized liquid and, for every litre of it, add syrup made from the water and sugar.
  4. Strain the liqueur and store it in bottles.
