
Peppermint & Chocolate Ice Cream Mooncake
A frozen, no-bake ice cream mooncake with a dark chocolate shell and a mint 'banana ice cream' centre. Yield 3. If you are sharing this recipe, kindly attach the link to the original blog instead of screen capture / copy & paste. If using store bought ice cream, omit part (A).

Ingredients
| 185 g | Frozen banana (A) |
| few drops | Mint extract (A) |
| — | Green food colouring, optional (A) |
| 120 g | Dark chocolate, melted (B) |
| — | Shaved chocolate, optional (B) |
Instructions
- Coat mooncake mould with a thin layer of chocolate. Let it set in the freezer, about 5 minutes. If using store bought ice cream, skip step 2.
- Meanwhile, blend (A) — frozen banana, a few drops of mint extract and optional green food colouring — in a blender until smooth. Add some shaved chocolate, if using. Mix gently with a spoon. The ice cream is ready.
- Scoop the ice cream onto (1).
- Return to freezer. When the ice cream is set, layer the top with some melted chocolate. Cover and return to freezer, let it freeze for 4 hours or overnight. Cut the mooncakes with a warm knife and serve right away.
