Peppermint Pizzelle Cannoli Christmas

Ingredients

½ tsp2.5 mlpeppermint extract
12 tbsp180 mlbutter
1 cancream cheese frosting
1 cup240 mlcandy cane pieces
1 boxpizzelle cookie mix
4eggs
½ cup120 mlchocolate chips
optionalred food coloring (optional)

  1. Put parchment paper on a baking sheet and set it aside.
  2. Follow the directions on the package to make Vanilla Pizzelle Mix.
  3. The pizzelles will be ready when the maker says they are. Carefully take one out at a time and wrap it around the metal cannoli tube while it is still hot. Do it again with the second warm pizzelle in your maker while the first one cools down. After taking the round pizzelles out of the tube, cool them on a baking sheet. Do it again with the rest of the batter.
  4. In the microwave, melt chocolate chips by stirring them every 30 seconds until they are completely melted. Be careful not to burn the chips, though.
  5. Put some crushed candy canes on a small plate. First, dip one or both ends of the "cannoli" shell into the melted chocolate. Then, quickly coat the shell in the peppermint pieces. Place back on the baking sheet and wait for the chocolate to harden.
  6. While the chocolate sets, put the cream cheese frosting out of the can in a medium-sized bowl and add a few drops of red food coloring and peppermint extract. Mix the ingredients well until you get the pink color you want. Add one drop of red at a time if you need more color.
  7. Put the mix in a ziplock bag and seal it up until the shells are ready. When you're ready, cut off a corner of the bag and pipe the filling into each shell until it reaches the other side's opening. If you want, you can add more peppermint pieces on top. You can eat it immediately or put it in a container with a lid in the fridge until you're ready to serve.
