
Perfect Grilled Skirt Steak
Thin skirt steak rubbed with an aromatic homemade meat seasoning, oil, garlic and lemon, then quickly grilled over a hot fire.

Ingredients
| 1/4 cup | 60 ml | canola oil |
| 1/4 cup | 60 ml | Meat Seasoning |
| 2 Tbsp | 30 ml | chopped garlic |
| 2 Tbsp | 30 ml | fresh lemon juice |
| 2 lb | 905 g | skirt steak, trimmed |
| 2 Tbsp | 30 ml | freshly ground black pepper |
| 1 Tbsp | 15 ml | salt |
| 1 tsp | 5 ml | ground cinnamon |
| 1/2 tsp | 2.5 ml | paprika |
| 1/2 tsp | 2.5 ml | dried thyme |
| 1/2 tsp | 2.5 ml | granulated onion powder |
| 1/2 tsp | 2.5 ml | granulated garlic powder |
| 1/4 tsp | 1.3 ml | ground cumin |
Instructions
- Meat seasoning: Stir together the pepper, salt, cinnamon, paprika, thyme, onion powder, garlic powder and cumin. Store in a sealed container up to 1 month.
- Mix the oil, ¼ cup seasoning, garlic and lemon juice. Rub over both sides of the steak, working it in. Marinate at room temperature 30–45 minutes (no longer than 30 min on a very hot day).
- Prepare a hot fire in a charcoal or gas grill and oil the grates.
- Grill the steak 3–5 minutes per side, to your preferred doneness. Rest 5 minutes before slicing to serve.
