Pineapple Pork Jerky

Ingredients

3 lbs1.4 kgpork
1/4 cup60 mlsoy sauce
1/2 cup120 mlpineapple juice
3 Tbsp45 mlbrown sugar
1 Tbsp15 mlDijon mustard
1 Tbsp15 mlhot sauce
1 tsp5 mlsalt
1/4 tsp1.3 mlground black pepper
1 clovegarlic, minced
1onion, minced
1 Tbsp15 mlWorcestershire sauce
2 Tbsp30 mlLiquid Smoke

Instructions

  1. Cut the meat into thin strips.
  2. Mix the seasoning together; add the meat in an airtight container. Marinate at least 24 hours in the refrigerator.
  3. Drain. Preheat the oven to 150°F or use a dehydrator. Arrange the meat so that pieces do not touch on a rack over another pan to catch drippings. Turn the meat regularly over the next 8 hours.
  4. Cool and store in an airtight container or food-storage bag.
