Pistachio Mug Cake - foam sponge
An airy siphon (whipping-siphon) sponge cake with pistachio paste, cooked in the microwave — a foam-like 'dunapren' texture.
Ingredients
| 120 g | egg white |
| 80 g | egg yolk |
| 30 g | flour |
| 80 g | pistachio paste |
| 30 g | sugar |
| 3 g | baking powder |
Instructions
- Mix everything in a bowl and blend, incorporating air with up-and-down movements.
- Pour into the siphon. Charge with either 2 cartridges and wait 5-10 minutes, or just 1 cartridge and wait 1 hour.
- With a knife, pierce the bottom of a plastic cup. Fill the cup with the mixture from the siphon to about 1/3.
- Put in the microwave on the second lowest possible wattage (about 450) for between 25 and 47 seconds. When you shake the cup it should wobble like jelly.
- Turn the cup over onto the counter and wait for it to drop out. Let it cool, tear apart and decorate.
