Mozzarella Pull-Apart Pitka

The dough is kneaded in the bread maker and baked in the oven. Makes 2 flatbreads studded with strips of mozzarella and drizzled with oil.

Ingredients

80 mlOil or olive oil
300 mlWarm fresh milk
12 gFresh yeast, dissolved in the milk
1Egg
550 gFlour (Sofia Mel Classic)
15 gSugar
10 gSalt
125 gMozzarella (1 ball), sliced into strips
50 mlOil or olive oil, for drizzling on top
Spices of choice, for sprinkling

Instructions

The dough is kneaded in the bread maker and baked in the oven.

Products for the dough for 2 pitki: 80 ml oil or olive oil 300 ml warm fresh milk 12 g fresh yeast dissolved in the milk 1 egg 550 g flour (Sofia Mel Classic) 15 g sugar 10 g salt

Add-ins: 1 ball mozzarella (125 g) sliced into strips 50 ml oil or olive oil for drizzling on top spices of choice for sprinkling

Preparation: The products are put into the machine in the order in which they are listed. Start a kneading program (30 minutes) + rising (1 hour). Line a baking tin (30 cm) with baking paper and spread half the dough evenly over it. Cut it into pieces of your desired size. Between the cuts arrange the mozzarella strips. Press the middle of each piece of the pitka with a finger and into the dimple pour the oil or olive oil. Sprinkle with the spices. Leave the pitka to rise for half an hour and bake in a fan oven preheated to 180–200°C for about 20 minutes.
