Pizzelle Cannoli
Pizzelle cookies rolled around a dowel while warm to form cannoli shells, then piped full of a sweet ricotta and whipped cream filling studded with mini chocolate chips.

Ingredients

| 2 tsp | 10 ml | baking powder |

| 1 tbsp | 15 ml | vanilla extract |
| 2/3 cup | 160 ml | mini chocolate chips plus more for garnish |
| 1 cup | 240 ml | granulated sugar |
| 2 cup | 480 ml | all-purpose flour |

To make the filling:
- Whip the heavy cream with an electric or standing mixer with a whisk attachment until stiff peaks form.
- In the meantime, mix the ricotta, powdered sugar, and 2 tsp of vanilla in a bowl. Combine the whipped cream with the mixture, cover, and refrigerate while you make the Pizzelle cookies.
To make the cookies:
- Lightly spray the Pizzelle iron with nonstick cooking spray and heat it. Mix the flour, sugar, butter, eggs, vanilla, and baking powder in a large bowl.
- Put about tbsp-sized balls of batter on the Pizzelle iron and close it up. Bake according to the manufacturer's instructions for 30 seconds to a minute or until the dough is golden brown.
- With a nonstick spatula, take out one pizzelle while leaving the other on the open press. Carefully wrap the second one around a 3/4-inch wooden dowel and pinch the ends of the cookie together.
- Hold the pizzelle until it is cool enough to keep its shape. Cover your fingers with a kitchen towel to prevent them from burning. Repeat with the second cookie on the press and the rest of the batter.
- Take the filling out of the fridge and mix in the chocolate chips. Using a pastry bag with a large coupler but no tip, pipe the filling into each side of a cooled pizzelle. It's okay if the filling doesn't go through the cookie.
- You can add more chocolate chips and powdered sugar as a garnish. Serve right away or chill until serving time.
