
Pork Cooked in Its Own Sauce (Jarred)
A home canning method: cubed pork (and some chicken) mixed with spices, packed into jars and pressure-cooked in the Instant Pot until the meat is tender and the sauce sets into a jelly.

Instructions
Chicken can be jarred the same way, in its own sauce.
- Cut the meat into pieces and toss it with spices.
- Fill the mixture into jars and screw the lids on tightly.
- Arrange 6 jars in the Instant Pot and pour in water up to the middle of the jars.
- Set to pressure cook on LOW for 1 hour 30 minutes.
- Let the pressure drop on its own (natural release).
- Remove the jars and turn them upside down onto their lids.
- In the morning place them in the refrigerator; the sauce will have set into a jelly.
Note: For 6 jars I used 1 kg 400 g of pork and 400 g of chicken.
