Pork Cooked in Its Own Sauce (Jarred)

A home canning method: cubed pork (and some chicken) mixed with spices, packed into jars and pressure-cooked in the Instant Pot until the meat is tender and the sauce sets into a jelly.

Ingredients

1400 gpork
400 gchicken
spices

Instructions

Chicken can be jarred the same way, in its own sauce.

  1. Cut the meat into pieces and toss it with spices.
  2. Fill the mixture into jars and screw the lids on tightly.
  3. Arrange 6 jars in the Instant Pot and pour in water up to the middle of the jars.
  4. Set to pressure cook on LOW for 1 hour 30 minutes.
  5. Let the pressure drop on its own (natural release).
  6. Remove the jars and turn them upside down onto their lids.
  7. In the morning place them in the refrigerator; the sauce will have set into a jelly.

Note: For 6 jars I used 1 kg 400 g of pork and 400 g of chicken.
