Homemade Pork Ham with Garlic
A homemade pork ham made from the basic ham-maker recipe, flavoured with pressed fresh garlic.

Ingredients
| 1 kg | leg of pork |
| 18 g | table salt |
| 4 g | curing salt |
| 100 ml | water |
| 4 g | icing sugar |
| 3 | garlic cloves, pressed |
Instructions
- Prepare the meat mass following the basic ham-maker recipe: cube about two thirds of the pork leg (approx. 2×2 cm) and grind or process the rest.
- Dissolve the table salt, curing salt and sugar in the water and blend into the meat.
- Blend the mass very thoroughly (at least 10 minutes with kneading hooks, or 20 minutes by hand).
- Add the 3 pressed garlic cloves and blend them through the mass before it goes into the ham maker.
- Fill the ham maker to approx. 1 cm below the rim, pressing each layer well, attach the lid and refrigerate for 48 hours.
- Stew the ham following the ham maker's instructions, then leave it to cool completely before slicing. Keeps for about two days in the refrigerator.
