Pork Roll with Spinach and Blue Cheese

Ingredients
| 2 kg | pork loin, whole piece | |
| 1 tsp | 5 ml | garlic powder |
| 1 tsp | 5 ml | salt |
| 1 tsp | 5 ml | freshly ground black pepper |
| 200 g | frozen spinach, thawed and well drained (for the filling) | |
| 0.5 bunch | dill, finely chopped | |
| 100 g | cream cheese | |
| 0.5 cup | 120 ml | crumbled blue cheese |
| 1.5 tbsp | 23 ml | Dijon mustard |
| 1 tsp | 5 ml | dried oregano |
| 2 tsp | 10 ml | dried basil |
| 2 tsp | 10 ml | dried black pepper |
| 0.5 cup | 120 ml | green onion, finely chopped |
| 3 slices | bacon, finely chopped |
Instructions
- Mix all the filling ingredients in a suitable bowl and stir well.
- Cut the pork loin lengthwise in 2 so you get one large piece about 4 cm thick.
- Spread the filling over the surface of the meat, roll it up and tie it tightly with thick string.
- Place the roll in a greased baking tray and sprinkle with salt, black pepper and garlic powder.
- Bake for about an hour in an oven preheated to 180 degrees. Let the finished roll cool slightly, then serve sliced into pieces and garnished with dill.
