Pork Tenderloin with Walnuts and Quince
Whole pork tenderloin roasted under foil with walnuts and quince in wine and butter. Serve garnished with a sprig of parsley.

Ingredients
| 800 g | pork tenderloin |
| 100 g | walnuts |
| 1 large | quince |
| 100 ml | wine |
| 80 g | butter |
| 60 ml | oil |
| — | black pepper |
| 8 g | salt |
Instructions
- Clean the pork tenderloin of membranes and shape it into a nice piece. Salt well and sprinkle with black pepper.
- Heat a little oil and sear it on all sides to seal it.
- In the same fat, briefly fry the walnuts, remove them, then briefly saute the peeled quince cut into pieces.
- Place the meat in a small roasting pan and distribute the walnuts and quince around it.
- Pour over the wine, sprinkle everything again with salt and pepper and roast under foil for about 90 minutes in a hot oven, but the time depends on the thickness of the pork tenderloin.
- Serve the pork tenderloin with a sprig of parsley.
