Portuguese-Style Roast Pork
A whole 1 kg piece of pork leg marinated in white wine with cloves, marjoram, bay leaf and cinnamon, then roasted over a bed of onion, tomatoes, apples and parsnip. Alternatively, cover the tray with foil and only brown for a few minutes at the end.

Ingredients

| 1 tea cup | white wine | |
| 1 tsp | 5 ml | black pepper |
| 1/2 tsp | 2.5 ml | cloves - crushed |
| — | marjoram - dried, to taste | |
| 2 pieces | bay leaf | |
| 2 pinches | cinnamon | |
| 2 heads | onion | |
| 4 pieces | tomatoes - peeled | |
| 4 pieces | apples - peeled | |
| 1 root | parsnip | |
| 150 ml | olive oil |
Instructions
- Prick the whole piece of pork leg all over with a fork and salt it.
- Mix the wine with all the spices and pour over the meat. Leave to marinate for 1 hour.
- In a greased roasting tray, chop the onion small, along with the peeled tomatoes, apples and parsnip. Place the pork on top and pour over the marinade.
- Pour in 150 ml olive oil and roast in a moderate oven for 2 1/2 hours, turning from time to time.
- Alternatively, cover the tray with foil and only brown for a few minutes at the end.
