
Fluffy Little Rolls (Puhkavi Kiflichki)
Soft, fluffy Bulgarian yeast rolls made with yogurt, shaped into crescents with a filling of your choice.
Ingredients
| 600 g | flour | |
| 1 packet | baking powder | |
| 1 tsp | 5 ml | salt |
| 200 ml | warm fresh milk | |
| 1 tsp | 5 ml | sugar |
| 25 g | fresh yeast | |
| 180 g | yogurt | |
| 100 ml | oil | |
| — | filling of choice | |
| 1 | egg for brushing |
Instructions
- Add salt and baking powder to sifted flour.
- Dissolve the yeast with the sugar in the milk and, without letting it froth, add it to the flour. Add the yogurt and oil as well. Knead a soft dough.
- Without letting it rise, divide the dough into two parts. Roll each into a round, thin sheet. Cut into 12 pieces and roll up into crescents with a filling of your taste. Arrange them on a paper-lined baking tray.
- Turn the oven on to 180 degrees. While the oven is heating, leave the rolls covered to rest. Brush with a lightly beaten egg and bake until golden.
