Pumpkin Bread with Green Onions
A soft yeast loaf enriched with pumpkin puree and rolled up with finely chopped green onions before baking.
Ingredients
| 550 g | flour | |
| 2 tsp | 10 ml | salt |
| 237 ml | pumpkin puree | |
| 180 ml | fresh milk | |
| 7 g | dry yeast | |
| 1 tsp | 5 ml | sugar |
| 100 g | margarine | |
| 2-3 stalks | green onions | |
| 1 tbsp | 15 ml | olive oil |
Instructions
. Sift 413 g of the flour together with the salt. . In a separate bowl, dissolve the yeast together with the sugar in the warm fresh milk and set aside for 5-10 minutes. . Add the pumpkin puree to the flour and stir. . Pour in the frothed yeast and the margarine, which has been melted and cooled. . Knead a dough, adding the remaining 137 g of flour little by little. . The dough should be soft and slightly sticky. . Place it in a greased bowl and cover it. . Leave it for 1 hour in a warm place or until it doubles in volume. . Divide the risen dough into two parts. . Shape each part with your hands into a rectangle. . Sprinkle with washed and finely chopped green onion. . Roll it up into a log. . Place the two logs in a greased bowl and cover them. . They rise for about 30 minutes or until they double in volume. . Grease with 1 tablespoon of olive oil. . Bake in a preheated oven at 200°C for about 40 minutes until a golden crust forms.

** Basically I threw everything in the bread machine.. I made the puree myself (I haven't seen it sold here)... I put 230 g pumpkin in a microwave dish, covered it and microwaved for 4-5 minutes on max... but since it was frozen it needed another 5 minutes on max.. after which I mashed it and drained the liquid.. The bread was delicious and was eaten down to the last crumb.
