
Ratlami Sev
Sev is a popular Indian snack food. Sev is essentially small pieces of crunchy noodles made from chickpea flour paste. These noodles vary in thickness. There are different varieties of sev, one of them is Madhya Pradesh (State of India) fame Ratlami Sev.

Ingredients
| 2 cups | 480 ml | chickpea flour (besan) |
| 1 tbsp | 15 ml | maida (refined flour) |
| 2 tsp | 10 ml | ajwain (carom seed) |
| 5 to 6 | cloves | |
| one small piece | cinnamon | |
| 2 tsp | 10 ml | black salt |
| 2 tsp | 10 ml | red chili powder |
| 2 tsp | 10 ml | cumin powder |
| 2 tsp | 10 ml | black pepper powder |
| 1 tsp | 5 ml | garam masala |
| pinch | turmeric | |
| — | salt to taste | |
| — | asafoetida | |
| 1 tsp | 5 ml | ginger powder (sunth) |
| 2 tbsp | 30 ml | oil |
| 1/2 cup | 120 ml | water |
| 1 tsp | 5 ml | amchur powder |
| — | oil for frying |
Instructions
- Dry roast ajwain, cloves and cinnamon. Take roasted spice into a bowl.
- Add black salt, red chili powder, cumin powder, black pepper powder, garam masala, turmeric, asafoetida, amchur powder and salt.
- Mix all ingredients and grind it into a fine powder.
- Take water in a bowl, add oil and ground powder. Mix it very well. Keep that aside.
- Take chickpea flour and maida in a bowl. Mix them.
- Knead a soft dough using prepared masala water.
- Put this mixture in a handy sev machine. The machine comes with different kinds of mold. Use sev mold. Place mold at the bottom in the machine and place dough in it. Close the machine tightly.
- Heat oil in a pan for frying sev over high to medium heat.
- When the oil is hot, hold the machine over oil and turn the handle to force dough through mold, moving continuously in a circular motion.
- Fry it until golden brown in color.
- Your spicy and tangy Ratlami Sev is ready.
