
Ribs with Coffee

Ingredients

| — | sea salt | |
| 1/2 cup | 120 ml | strong coffee (e.g. 2 espresso) |
| 2 tbsp | 30 ml | Worcestershire sauce |
| 2 tbsp | 30 ml | maple syrup or honey |
| 1 tbsp | 15 ml | mustard |
| 1 tbsp | 15 ml | tomato concentrate |
| 1 tbsp | 15 ml | wine vinegar |
| 2 tsp | 10 ml | pink pepper |
| — | freshly ground black pepper | |
| 1/3 tsp | 1.7 ml | chili powder (or smoked paprika), to taste |
| 3-4 | garlic cloves (optional) | |
| 250 ml | red wine (optional) |
Instructions
- Cut the ribs into single-bone pieces and season with salt. Place them in a plastic bowl and add all the marinade ingredients: brewed and cooled coffee, crushed pink pepper, Worcestershire sauce, maple syrup, mustard, tomato concentrate, wine vinegar, freshly ground pepper and chili to taste. Mix everything, submerge the ribs completely in the marinade, cover with a plate and refrigerate overnight.
- The next day, heat the oven to 180 degrees. Place the ribs and the marinade in a baking dish and bake for 1 hour without a lid, turning the ribs over occasionally. Then cover with aluminium foil and bake for about 50-60 minutes (the exact baking time will depend on the thickness of the ribs, the amount of fat on the meat and how well-done we like the ribs), turning 2-3 times in the meantime.
