
Rootitoot Pork Roast with Apples & Onions
My mother always made pork chops and pork roast with apples, onions and sage. I think of her fondly every time I make this, her recipe.
Ingredients

| 1 tsp | 5 ml | salt |
| 0.5 tsp | 2.5 ml | pepper |
| 1 Tbsp | 15 ml | oil |
| 1 | onion, sliced | |
| 0.75 cup | 180 ml | chicken broth |
| 0.75 cup | 180 ml | apple juice |
| 2 | apples, diced (optional) | |
| 0.5 tsp | 2.5 ml | dried thyme |
| 0.5 tsp | 2.5 ml | sage |
| 1 | bay leaf | |
| 3 Tbsp | 45 ml | butter |
| 2.5 Tbsp | 38 ml | flour |

- Pat the roast (boneless or bone-in) dry with paper towel and season it with salt and pepper. Press Saute on the Instant Pot and add the oil. Brown the roast well on all sides. Nice, dark brown. Then transfer it to a plate. Add the onions to the pot and saute for a couple of minutes, until translucent.
- Add the broth and apple juice and thoroughly deglaze the pan: use a wooden spoon or spatula to scrape all the browned bits off the bottom of the pot. Do NOT skip this step or you could end up with the Burn warning and your Instant Pot will shut down. Never a happy thing.
- Return the roast to the pot and turn it to coat all sides with the liquid. Add the diced apples and herbs. Close the lid, make sure the valve is set to Sealing and press the Pressure Cook (or Manual) button. Adjust time using the + and - buttons to get to 60 minutes. Walk away with a smile.
- When it beeps that it's done, leave it for 15 minutes natural release. Then flip the valve to Venting for a quick release. When the pin drops, remove the lid. Place the roast on a plate and cover with tin foil.
- Finish the sauce: Strain the cooking liquid and discard the solids. Hit Saute and add the butter to the pot. Add the flour and cook, stirring constantly for a minute or so. Add the reserved cooking liquid all at once and whisk vigorously. Bring it to a boil to thicken. If it's too thick, add a little water, broth or apple juice.
- Slice the pork and serve with the delicious sauce.
