
Russian Fish Pie
A yeast-dough fish pie filled with smoked cod, spinach, shrimp and boiled eggs in a creamy nutmeg sauce.

Ingredients
| 450 g | smoked cod fillet | |
| 150 ml | fresh milk | |
| 400 g | spinach, blanched | |
| 150 ml | water | |
| 1 pc | bay leaf | |
| 1 sprig | parsley (sprig) | |

| 120 g | boiled shrimp | |
| 2 pcs | boiled eggs | |
| 30 g | flour | |
| 30 g | butter | |
| 1 tsp | 5 ml | lemon juice |
| 1 pinch | grated nutmeg | |
| 2 tsp | 10 ml | chopped parsley |

Instructions
- Divide the smoked cod fillet into several pieces, place it in a pan together with the water and the milk, season with parsley, bay leaf and black pepper, and once it comes to a boil remove the vessel from the heat.
- Separate the fish fillet, debone it, chop it finely and place it in a dish together with the shrimp and the finely chopped boiled eggs. Add the finely chopped spinach and stir.
- In a saucepan melt the butter, add the flour and fry it for 1 minute. Pour in the fish stock in small portions until it thickens. Add the nutmeg, the chopped parsley and the lemon juice and cook like this for another minute.
- Pour the resulting sauce over the fish, shrimp and eggs, then leave to cool for an hour.
- In a greased tray spread out the dough, pour in the fish mixture and bake until golden brown.
