Savory Rolls
Savory yeast rolls with pork lard, rolled into crescents with a filling of your choice (here cheese and ham, and also chocolate), brushed with egg yolk and topped with sesame or poppy seeds.
Ingredients
| 2 яйца | Eggs plus 1 egg white (yolk reserved for brushing) |
| 1 ч.ч. | Melted pork lard |
| 6 с.л. | Sugar |
| 1 ч.л. | Salt |
| 30 г | Yeast (a bit more than half a 40g cube) |
| 2 ч.ч. | Warm fresh milk |
| — | Flour for a medium-firm dough |
Instructions
The yeast is dissolved in a little warm milk plus 1 tbsp sugar. The eggs are beaten, the risen yeast is added, along with the remaining sugar, the lard, the salt and the milk. A soft dough is kneaded and left to rise for about 30 minutes. The ready dough is divided into balls, each is rolled out and cut into triangles. Rolls are rolled up with a filling of your choice. I made them with yellow cheese (kashkaval) and ham, and of course with chocolate. They are arranged in a tray lined with paper and brushed with egg yolk. Sprinkle sesame or poppy seeds on top. They are baked in a preheated oven at about 200 degrees.
Note: 2 eggs and 1 egg white are used; the yolk + 1-2 tbsp water are mixed and set aside for brushing the rolls.
