Shiitake Dashi
Deeper, earthier, and more intensely savory than kombu alone — shiitake dashi is an indispensable foundation for winter soups.
Ingredients
| 4 cups (960ml) | cold water |
| 6-8 | dried shiitake mushrooms |
Instructions
- Place the dried shiitake mushrooms in the cold water. Soak in the refrigerator for at least 4 hours or overnight. Cold soaking extracts more umami than warm soaking.
- Strain through a fine-mesh sieve lined with cheesecloth or a coffee filter. Squeeze the mushrooms gently to extract all the liquid.
- Reserve the rehydrated mushrooms for use in other recipes.
- Store the dashi in the refrigerator for up to 4 days.
