
Shorbat Adas (Lebanese Lentil Soup)
A quick Lebanese red lentil soup seasoned with cumin, turmeric and lemon.

Ingredients

| 1.5 cups | 360 ml | red lentils, rinsed and drained |
| 0.75 | onion, diced | |
| 1.5 | vegetable (or chicken) bouillon cube | |
| 1 | bay leaf | |
| 1.5 tsp | 7.5 ml | salt, or to taste |
| 0.75 tsp | 3.8 ml | cumin |
| 0.75 tsp | 3.8 ml | turmeric |
| 0.25 tsp | 1.3 ml | ground black pepper, or to taste |
| 0.75 | lemon, juiced | |
| — | chopped fresh cilantro |

- Combine the water, lentils, onion, bouillon cube, bay leaf, salt, cumin, turmeric and black pepper together in the inner steel pot of the pressure cooker.
- Lock the pressure cooker lid in place and set the steam vent to Sealing. Select Pressure Cook (Manual) and cook for 10 minutes on High Pressure. Set the steam vent handle to Venting to quick-release the pressure.
- Remove the bay leaf from the soup and blend the soup using an immersion blender until smooth.
- Stir the lemon juice into the soup and ladle the soup into bowls; top with cilantro.
Mealthy Tip: Blending the soup is optional. Some prefer it to be on the chunkier side.
