Ingredients

1 Tbsp15 mlfresh butter
1small yellow onion, finely chopped
1 cloveminced garlic
to tastesalt and black pepper
1 lb455 gshrimp, cleaned and deveined
2 Tbsp30 mltomato paste (fresh or canned)
3/4 cup180 mlcanned coconut milk
1/2 tsp2.5 mlfinely chopped parsley
1/2 tsp2.5 mlground mustard seeds

Instructions

  1. Press the SAUTÉ button on your Instant Pot and heat butter.
  2. Sauté chopped onion and garlic with the pinch of salt and pepper for 2 minutes.
  3. Add the shrimp and lightly stir.
  4. Add all remaining ingredients and lightly stir.
  5. Lock lid into place and set on the MANUAL setting high pressure JUST for 1 minute.
  6. When the timer beeps, use a Natural release for 10 to 15 minutes.
  7. Serve over rice or noodles.
