Ingredients
| 1 Tbsp | 15 ml | fresh butter |
| 1 | small yellow onion, finely chopped | |
| 1 clove | minced garlic | |
| to taste | salt and black pepper | |
| 1 lb | 455 g | shrimp, cleaned and deveined |
| 2 Tbsp | 30 ml | tomato paste (fresh or canned) |
| 3/4 cup | 180 ml | canned coconut milk |
| 1/2 tsp | 2.5 ml | finely chopped parsley |
| 1/2 tsp | 2.5 ml | ground mustard seeds |
Instructions
- Press the SAUTÉ button on your Instant Pot and heat butter.
- Sauté chopped onion and garlic with the pinch of salt and pepper for 2 minutes.
- Add the shrimp and lightly stir.
- Add all remaining ingredients and lightly stir.
- Lock lid into place and set on the MANUAL setting high pressure JUST for 1 minute.
- When the timer beeps, use a Natural release for 10 to 15 minutes.
- Serve over rice or noodles.
