
Sicilian-Style Stuffed Tomatoes with Fish

Ingredients

| 75 g | breadcrumbs | |
| 150 g | parmesan | |
| 2 cloves | garlic | |
| 1 bunch | parsley | |
| 4 fillets | fish | |
| 16 pcs | olives | |
| 4 tbsp | 60 ml | olive oil |
Instructions

- Cut a lid off each tomato at the stem end and gently hollow it out. Finely chop the basil and sprinkle it inside the tomatoes.
- Mix together the breadcrumbs, crushed garlic, grated parmesan, parsley, the chopped fish fillets, the previously pitted and chopped olives and the chopped tomato flesh.
- Fill the tomatoes with this mixture, drizzle with a little olive oil and cover with the lids.
- Bake in a preheated oven at 200 degrees for about 20 minutes.
