Smiling Apple Cookies

Soft cream-cheese dough hand pies filled with cinnamon-sugar apple slices and dusted generously with powdered sugar.

Ingredients

250 gsoft butter
100 gpowdered sugar
2 packetsvanilla sugar
250 gcream cheese
420-450 gflour
3medium apples (red-skinned; yellow-skinned also work)
50 gsugar
1/2 tsp2.5 mlcinnamon
powdered sugar for dusting

Instructions

  1. Beat the soft butter, powdered sugar and vanilla sugar with a mixer. Add the cream cheese and flour. Knead a soft dough. Leave the dough for 10 minutes in the fridge.
  2. Meanwhile, wash and dry the apples and cut them in half. Remove the core with a knife and slice them into half-moons 6-7 mm thick. Mix the sugar and cinnamon. Turn the oven on to 200 degrees.
  3. Roll out the dough into a thin sheet 6-7 mm (help yourself with flour). Cut out circles with a glass. There are three variants, choose which one you'll make:
  4. Variant 1 - on the cut-out dough place a piece of apple on one side and fold over. Arrange in a tray lined with paper.
  5. Variant 2 - on the cut-out round of dough place, on one side, a piece of apple rolled in the sugar-cinnamon mix, fold over with the other part of the dough and arrange in a paper-lined tray.
  6. Variant 3 - roll the cut-out piece of dough in the sugar-cinnamon mix. On one side place a piece of apple and fold over with the other part of the dough.
  7. Bake in the preheated oven until done. While still warm, dust generously with powdered sugar.
