
Smiling Apple Cookies
Soft cream-cheese dough hand pies filled with cinnamon-sugar apple slices and dusted generously with powdered sugar.
Ingredients
| 250 g | soft butter | |
| 100 g | powdered sugar | |
| 2 packets | vanilla sugar | |
| 250 g | cream cheese | |
| 420-450 g | flour | |
| 3 | medium apples (red-skinned; yellow-skinned also work) | |
| 50 g | sugar | |
| 1/2 tsp | 2.5 ml | cinnamon |
| — | powdered sugar for dusting |
Instructions
- Beat the soft butter, powdered sugar and vanilla sugar with a mixer. Add the cream cheese and flour. Knead a soft dough. Leave the dough for 10 minutes in the fridge.
- Meanwhile, wash and dry the apples and cut them in half. Remove the core with a knife and slice them into half-moons 6-7 mm thick. Mix the sugar and cinnamon. Turn the oven on to 200 degrees.
- Roll out the dough into a thin sheet 6-7 mm (help yourself with flour). Cut out circles with a glass. There are three variants, choose which one you'll make:
- Variant 1 - on the cut-out dough place a piece of apple on one side and fold over. Arrange in a tray lined with paper.
- Variant 2 - on the cut-out round of dough place, on one side, a piece of apple rolled in the sugar-cinnamon mix, fold over with the other part of the dough and arrange in a paper-lined tray.
- Variant 3 - roll the cut-out piece of dough in the sugar-cinnamon mix. On one side place a piece of apple and fold over with the other part of the dough.
- Bake in the preheated oven until done. While still warm, dust generously with powdered sugar.
