
Smoked Bacon Wrapped Onion Rings
Thick sweet-onion rings brushed with sriracha, wrapped in bacon, dusted with black pepper and smoked until crisp, served with a spicy sriracha mayo.

Ingredients
| 1 lb | 455 g | bacon |
| 3 | sweet onions | |
| 2 tbsp | 30 ml | black pepper |
| ½ cup | 120 ml | sriracha hot sauce |
| 2 tbsp | 30 ml | mayo |
| 1 tsp | 5 ml | lime juice |
Instructions
- Cut the onions into ½-inch thick rings and pop the internal rings out, leaving about 2 rings on each so you have a sturdy but bite-friendly onion ring. Keep them intact so they don't fall apart on the smoker.
- Brush each onion ring generously with sriracha hot sauce (its thickness helps it cling to the onion).
- Wrap each ring with full slices of bacon — most rings need about 3 slices to go all the way around — and secure with a skewer or toothpick.
- Heavily coat the rings with black pepper, then smoke, grill or bake for about 90 minutes at 250–350°F (120–175°C).
- For the spicy sriracha mayo, combine 2 tbsp mayo, 1 tbsp sriracha and 1 tsp lime juice; mix well and serve alongside.
