Smoked Ketchup and Mustard
Two everyday condiments transformed with a light, cold-smoky flavour — smoked mustard for pork and ham, smoked ketchup for burgers and fries.
Ingredients
| — | ketchup |
| — | mustard |
| — | hot sauce (optional) |
Instructions
- Spread the ketchup or mustard in an aluminium pan to about ¼-inch depth.
- To avoid scorching, cold-smoke the condiments — either in a cold-smoker setup or using the handheld smoking-gun method.
- Smoke lightly until the condiment takes on a gentle smoky flavour. The smoked mustard pairs beautifully with any pork product (especially ham) and the smoked ketchup is incredible on burgers and fries.
- If you like spicy condiments, you can smoke hot sauce the same way using either method.
