Smoked Ketchup and Mustard

Two everyday condiments transformed with a light, cold-smoky flavour — smoked mustard for pork and ham, smoked ketchup for burgers and fries.

Ingredients

ketchup
mustard
hot sauce (optional)

Instructions

  1. Spread the ketchup or mustard in an aluminium pan to about ¼-inch depth.
  2. To avoid scorching, cold-smoke the condiments — either in a cold-smoker setup or using the handheld smoking-gun method.
  3. Smoke lightly until the condiment takes on a gentle smoky flavour. The smoked mustard pairs beautifully with any pork product (especially ham) and the smoked ketchup is incredible on burgers and fries.
  4. If you like spicy condiments, you can smoke hot sauce the same way using either method.
