Smoked Mushrooms for Grill

Button or baby portabella mushrooms marinated in Italian dressing and smoked over hardwood until tender, juicy and full of woodsy flavour.

Ingredients

2 lb905 gbutton mushrooms or baby portabella mushrooms
16 oz455 gItalian dressing
salt
pepper
hardwood for smoking

Instructions

  1. Place the mushrooms in a gallon-sized bag and pour in the Italian dressing. Add salt and pepper to taste and rotate the bag to ensure even coverage.
  2. Optional: let the mushrooms marinate 1 hour, or longer if desired.
  3. Add hardwood chunks to the smoker (amount will vary depending on your brand's recommendations).
  4. Place the mushrooms in the smoker set at about 250°F (120°C) and smoke for 60 minutes, or until the mushrooms are tender and have reduced in size.

Grilling method: 5. If using a grill, place 2 chunks of hardwood over the charcoal (if using propane, omit the hardwood). 6. Set the mushrooms over indirect heat so they don't burn. Grill until the mushrooms are tender and reduced in size; cooking time will vary with grill temperature.

Notes: Don't worry about the exact temperature — 250°F is simply the most common temperature for smoking meats alongside these. They smoke well at any temperature as long as it's cool enough not to burn them. They taste best with a hardwood such as cherry wood, but are still excellent grilled without hardwood.
